    Splendid Cocoa-Cinnamon Cake

    Adapted from a Bisquick recipe

    Recipe Introduction


    Took the old-fashioned Cocoa-Cinnamon Bisquick cake and reduced the sugar by using Splenda. Worked great and reduced the calories too.

    List of Ingredients





    1 ½ cups Bisquick baking mix
    ¼ cup Splenda For Baking
    ¼ cup cocoa, baking type
    ½ cup water
    ¼ cup vegetable oil
    1 teaspoon vanilla
    ½ teaspoon cinnamon
    1 egg
    Topping
    â…“ cup flaked coconut
    3 tablespoons Splenda Brown Sugar Blend
    â…“ cup chopped pecans
    3 tablespoons butter, softened
    2 tablespoons milk

    Recipe



    Cake: Preheat oven to 350 degrees F. Grease square 8 x 8 or round 9-inch cake pan.

    Beat all ingredients together for 2 minutes, scraping occasionally, except Topping ingredients.

    Pour batter into prepared pan and bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. Prepare Topping.

    Topping: In a small bowl, combine coconut, brown sugar blend, pecans, butter and milk. Spread over cake. Broil 2 to 3 minutes or unitl topping is golden brown.

    Serves 8.
