    Ham and Swiss Cheese Casserole

    8 ounces cooked ham -- cubed
    1 cup rice
    2 tablespoons butter
    3 eggs -- lightly beaten
    1 1/3 cups milk
    2 cups Swiss cheese -- shredded

    Preheat oven to 350 degrees F. Spray a 11 x 7-inch baking dish with nonstick cooking spray.

    Cut ham into small cubes. Cook rice according to package directions but omit butter and salt. Remove from heat and stir in butter and then the ham. Whisk eggs and milk until blended. Add to rice mixture along with the cheese. Pour into prepared baking dish. Bake for 45 to 50 minutes or until set. Serves 6.
