    Freezer Ham and Cheese Crepes

    Frozen Assets
    Crepes
    2 cups flour
    2 cups 1% low-fat milk
    1 tablespoon salt
    2 eggs
    Filling
    8 ounces cooked ham -- thinly sliced
    1/2 cup Swiss cheese -- shredded
    8 teaspoons prepared mustard

    Crepes: Combine ingredients in a blender until smooth. Spoon crepe
    mixture into a frying pan, and use spoon to spread mixture to almost
    opaque. As soon as top appears slightly bubbly, flip and cook just
    until done.

    To Freeze: Stack crepes between layers of waxed paper before putting
    into a freezer bag. Freeze up to 3 months.

    To Serve: Thaw crepes 2 to 3 hours before serving. Spread each with
    mustard, a slice of cooked ham, and a bit of cheese. Roll up tightly.
    Place on a baking sheet that's been sprayed with nonstick cooking
    spray. Bake 12 to 16 minutes at 350 degrees F or until heated through
    and cheese melts. Serves 8 to 10.

    NOTES : The ham filling amounts are suggested. I guessed on the amount used. Use the amount of ham filling that pleases your palate.
