    Real Simple Dinner Tonight Done!

    Another quick and easy recipe.

    List of Ingredients




    1 1/2 pounds Yukon Gold potatoes, about 3, peeled and cut into 2-inch pieces
    Kosher salt
    Pepper
    1/2 cup whole milk
    2 tablespoons unsalted butter
    1 tablespoon olive oil
    1 pound ground beef
    1 tablespoon Worcestershire sauce
    1 1/2 cups frozen peas and carrots

    Preheat oven to 425 degrees F. Spray 4 individual baking dishes with nonstick cooking spray.

    Add potatoes to a pot of cold water. Bring to a boil and add 2 teaspoons salt. Reduce heat simmer until just tender, 15 to 18 minutes. Drain potatoes and return to pot. Add milk, butter and 1/4 teaspoon EACH salt and pepper. Mash to desired consistency.

    Heat oil in a large skillet over medium-high heat. Add beef and cook, breaking up with spoon, until no longer pink. This should take 5 to 6 minutes. Add ketchup, Worcestershire sauce, 1/2 teaspoon salt and 1/4 teaspoon pepper. Mix to combine. Fold in peas and carrots

    Spoon meat mixture into prepared baking dishes. Top with mashed potatoes. Bake until golden, 15 to 20 minutes.

    Serves 4.
