Microwave Chicken and Peppers

1 1/2 pounds chicken pieces
1 tablespoon olive oil
1 onion -- chopped
2 cloves garlic -- mashed
1 cup canned tomatoes -- drained
3 tablespoons tomato paste
2 tablespoons dry white wine
1/2 teaspoon oregano
1/2 teaspoon thyme
1/2 teaspoon sugar
dash red pepper
1 green pepper -- sliced
1 red pepper -- sliced
2 tablespoons parsley -- chopped
Remove skin from chicken pieces; set aside. In 12-cup casserole (3 quart size) combine oil, onion and garlic; microwave at HIGH for 3 to 4 minutes or until softened. Drain and chop tomatoes. Add tomatoes, tomato paste, wine, oregano, thyme, sugar, red pepper and salt and pepper to taste. cover and microwave HIGH for 5 to 7 minutesj or until slightly thickened, stirring once. Add chicken pieces, spooning some sauce over top. Add green and red peppers; cover and microwave at HIGH 10 to 14 minutes or until chicken in no longer pink insdie, stirring once. Sprinkle with parsley; let stand covered 10 minutes. Serves 4.
