    Mama Cooks A Day Ahead

    List of Ingredients





    1 can tuna
    1 cup shrimp, cleaned and cooked
    1/2 cup mayonnaise
    2 tablespoons lemon juice
    2 to 3 tablespoons French salad dressing
    1 teaspoon curry powder
    1/2 cup celery, chopped
    1/2 cup olives, chopped
    3 cups cooked rice
    1/2 cup parsley, minced

    Recipe





    Drain tuna and add to a mixing bowl. Add the shrimp and mix together. Add the celery and 1/4 cup olives. In a small bowl blend mayonnaise, curry powder and lemon juice. Pour over tuna and shrimp mixture, toss, cover and refrigerate overnight. In another bowl mix French salad dressing with rice and parsley, cover and chill overnight in refrigerator.

    To Serve: Spoon rice onto a serving platter, making a mound. Heap seafood mixture on top and garnish with remaining olives.

    Serves 4 to 6.
