16 ounces pinto beans, canned -- drained
1 clove garlic -- mashed
1/2 teaspoon cumin
1/4 cup onion -- chopped
1/4 teaspoon red pepper
1/2 cup beef broth
1/2 cup Cheddar cheese -- shredded
salt -- to t
Place all ingredients except cheese in a blender or food processor and blend until pureed. Put pureed bean mixture in a 1 1/2-quart casserole dish; add 1/4 cup cheese and salt to taste; blend well.
Cover with waxed paper and microwave on70% 6 minutes, stirring after 3 minutes. Stir beans and top with remaining shredded cheese and microwave on High 30 seconds or until cheese melts. Serves 4.
