    Pickled Beets

    Recipe Introduction

    I halved this recipe and used a 16 ounce can of beets. Worked great and it was easy to make.

    List of Ingredients

    2 pounds fresh beets -- cooked, skinned
    3 tablespoons sugar
    1/2 teaspoon salt
    1/4 teaspoon dry mustard
    1/4 teaspoon whole cloves
    1/3 cup cider vinegar
    1/4 cup water


    Recipe


    Slice beets into a glass container. Combine remaining ingredients and cook high, uncovered, 1 to 2 minutes or until boiling. Stir until the sugar dissolves. Pour over beets. Cover and chill at least 2 hours, stirring occasionally. Makes 2 cups.
