    Serves 4 to 6

    List of Ingredients




    1 lb. ground beef
    1 jar salsa (16 to 20 oz.)
    1 small can ripe olives
    1 can corn
    1 pkg. taco mix
    1 box Jiffy corn bread mix
    1 pkg. (16 oz) shredded cheddar cheese

    sour cream
    diced tomatoes
    shredded lettuce

    Recipe







    Brown the ground beef and drain. Add the following to the ground
    beef; taco mix, salsa, olives, corn, 1/4 of the cheese. Mix well and
    allow to simmer for 10 minutes. While meat is simmering, prepare the
    cornbread adding another 1/4 of the cheese. In a 9 x 13 baking pan,
    pour meat mixture into pan. Spread remaining cheese over top of the
    meat mixture. Add cornbread mixture on top evenly. Bake at 350 for
    approx. 20 minutes or until cornbread is done. Top with sour cream,
    lettace and tomatoes if desired.
