Squash-Rice Casserole

List of Ingredients
2 1/2 lbs zucchini
1/2 c chopped onion
1/2 c ff chicken broth
2 c cooked rice
1 c shredded ff or rf cheddar cheese
1 c ff sour cream
1/4 c fresh parmesaen cheese
1/4 c. italian seasoned bread crumbs
1 tsp salt, 1/4 tsp pepper
2 eggs lightly beaten ( I used eggbeaters)

1. Preheat oven to 350
2. Combine first 3 ingredients in a large pot...bring to a boil, cover and reduce heat and let simmer for about 20 minutes or until tender. Drain, partially mash with potato masher.
3. Combine above mixture with rice, cheddar chesse, sour cream, 2 tbsp parm. cheese, breadcrumbs, salt, pepper & eggs. Stir gently
4. Spoon mixture in 9 x 13 pan coated with cooking spray. Sprinkle 2 tbsp parm cheese on top.
5. Bake for 30 minutes...then heat broiler...and put under broiler for 1 minute or so till lightly browned.
