    Make sure not to overbake the cake. It makes all the difference between having a
    wonderful cake or a dry mass of flour and sugar.

    List of Ingredients




    3 cups flour
    2 cups sugar
    1 1/2 teaspoon baking soda
    1 teaspoon salt
    1 teaspoon ground cinnamon
    1 cup chopped nuts, walnuts or pecans
    3 eggs, beaten
    1 cup vegetable oil (NOT olive oil), can substitute applesauce
    1 1/2 teaspoon vanilla
    20 oz. can crushed pineapple
    2 cups chopped bananas

    Recipe



    Mix dry ingredients together and set aside. Beat eggs and oil in mixer bowl until thick and lemon colored. add dry ingredients, and mix well. Stir in bananas, pineapple, nuts and flavoring. Spoon into greased and floured 9 x 13 pan. Bake at 350 for 1 hour. Cool on wire rack

    8 ounces cream cheese, softened
    1/2 cup butter, softened
    1 pound confectioner's sugar
    1 teaspoon vanilla extract

    Beat together cream cheese and butter until mixed, then beat in sugar until smooth. Finally, add
    vanilla. Spread on cooked cake. You can also cut down on the sugar to one cup with pineapple, banana and applesauce combination because they have a lot of sugar. Be daring, experiment with different fruit combinations!!
