BROCCOLI SOUP

List of Ingredients
1 cube butter
1 large onion
several large potatoes
chicken bullion powder or cubes
Frozen Broccoli (I like the bigger pieces of broccoli and the more the
better, but you can adjust it to your own tastes)
salt and pepper to taste
I add a little thyme to mine also , but this is optional
Recipe
Melt the butter in the bottom of a large pan. Saut� onion in the butter
until tender.
Fill pan with water and add chicken bullion cubes to the water (3 cubes
for every 2 c. water). Add several large potatoes to broth and cook
until potatoes are done ( the more potatoes the creamier your soup will
be, this it the base for you soup)
When potatoes are done take the mixture of onion, broth and potatoes and
put it all through the blender or food processor until smooth, Return
to pan and simmer on low heat. Cook broccoli according to package
directions. If you just add it to the soup before cooking you will have
green soup. Rinse broccoli in a strainer and then add to soup. Heat
through and serve. We like this with cheese, We just add our own to
each bowl. It is very good with or without the cheese.
