What is the secret to good barbecued chicken? The barbecue sauce of course. I come up with this recipe because I had promised my family barbecue chicken on a day that the roads where closed because there were tornado watches all over town. Everyone was so gloomy because all there was to do was sit around and I could not tell them that there would not be any barbecued chicken (my dad's favorite). I looked in my food closet and the refrigerator to see what I had. I received so many compliments and even a few members of my family wanted to know what brand it was. I have to admit it did not come out really good the first time. The dogs had "gravy" on their food for a few days. I also have worked on it since then. Below is the recipe I hope you try it. I think you will like it.
(Most people usually have all of these ingredients on hand (maybe not the lemon) and this sauce is much quicker to make than for me to drive to the store.)
1 cup ketchup
4 teaspoon Worcestershire sauce
1 teaspoon salt
1 teaspoon mustard
dash of red pepper (more if you like, we just like ours mild)
1 stick butter
The juice of 1 small lemon
1/2 cup minced onions (optional)
Mix all of the ingredients and bring to a rolling boil. Reduce heat and let the sauce simmer for about 20 minutes.
This sauce is very good and I urge you to try it. You can even add a few ingredients of your own like honey if you want to sweeten the sauce up a bit.
Now all you need is the chicken (or other meat of choice). I find that the meat is always tastier if you add the sauce before cooking and several times while the meat is cooking. (This sauce is very good on baked pork chops also!)
