    BASIC BUTTERMILK CORNBREAD

    1/2 cup butter (no substitutes in my opinion)
    1 cup self-rising corn meal (Not corn meal mix)
    1/2 cup flour
    1 egg, beaten
    1 cup buttermilk

    Heat oven to 350*.Melt the butter in a small castiron skillet(just place in oven). Stir together well the corn meal, flour, egg, and buttermilk. Then add the melted butter, leaving a little in the bottom and along the sides of the skillet. Stir together and pour into the heated skillet. Bake for 25-30 minutes. Serve immediately (but can be reheated later)(also freezes very well).
    *Can be used for corn bread sticks of muffins as well.
    *Also can be doubled for larger skillets.
