    Amish Lasy Lasagna



    Amish Lazy Lasagna

    2 lb. ground beef
    1 onion, chopped
    8 oz. tomato sauce
    8 oz. tomato paste
    1 tsp. oregano
    2 tsp. sweet basil
    1 Tbsp. parsley
    2 cloves garlic, minced
    2 1/2 to 3 cups water, divided
    32 oz. cottage cheese
    2 eggs, slightly beaten
    2 lb. mozzarella cheese
    16 oz. lasagna noodles


    Preheat oven to 350° F.

    Brown beef and onion in a large skillet; drain and return meat to skillet.
    Add tomato paste, sauce,1/2 cup water, garlic and seasonings to meat.
    Simmer for 10 minutes.

    In a small bowl, combine cottage cheese and eggs.

    In a 13x9" baking pan, at least 3" deep, layer half of meat, noodles and
    cottage cheese mixture. Repeat layers and pour remaining water over entire
    dish, enough to cover the last layer of noodles.

    Cover with foil and bake in preheated 350 degree oven for 1 1/2 hours.
