    Donna's Filled Cookies

    1 C Crisco shortening
    2 C Sugar
    2 Eggs
    1 tsp Vanilla
    1 C Sour Cream
    5 C Flour
    2 tsp Baking Pwd
    1 tsp Baking Soda
    1/2 tsp Salt

    2-3 egg whites
    1 C Sugar

    Cream shortening & sugar until fluffy. Add eggs, vanilla, & sour cream. Mix well. Add next 4 dry ingredience. Chill overnight. Roll out to med-thick. Cut w/2" round cutter (biscuit cutter?). Place circles 2" apart on sheet. Top each with a dollop of desired filling (bought raspberry, cherry, blueberry, raisin, apricot). Then top with a second dough circle. Press edges to seal. Brush with beaten egg whites. Sprinkle with heavy coating of sugar. Bake @ 400 for 13-14 minutes until golden brown. Makes 2 1/2-3 doz.


    Filling suggestions. I use the raspberry & cherry fillings that come in a long clear plastic tube that you can get at some grocery stores or baking supply stores. I like to make my own blueberry jam & use it as the filling. It soaks the cookies a bit, but the flavor is out of this world. I use bought apricot jam or filling. I like to make my own raisin filling by simmering raisins & then adding a sugar & starch mixture to them with a pinch of salt.

    I also like to cut a hole in the center of the top cookie before placing it on top. That way I can see what the filling is once the cookie is baked. I use the end of a funnel to create this hole.
