    *** VANILLA COOKIES

    MARY
    VANILLA COOKIES

    400 degrees
    12 minutes

    SINGLE *************** DOUBLE

    1 c. stick oleo or butter ****** 2 c. oleo

    1 � c. sugar ******** 3 c. sugar

    2 eggs, beaten ********* 4 eggs, beaten

    1 � tsp. Vanilla + ********* 3 tsp, + vanilla

    � tsp. Salt ************ 1 tsp. salt

    1 tsp. Baking soda ************ 2 tsp. Baking soda

    3 � c flour ***************** 7 c. flour

    Cream together the oleo and sugar then add beaten eggs and stir, add the rest in order given, making sure not to add the flour all at once. Chill. Roll out on floured pastry cloth and cut as desired. I have made this into balls and rolled in colored sugar. I have also rolled in wax paper and sliced after the dough has chilled over night. These were meant to be iced, we like them better without icing.

    My Cooked icing for cookies or cakes

    I use about 1/4 c. of milk in saucepan and add dash of salt, heaping Tbspoon of flour and then stir over heat until thickened add 1 T of oleo and stir until thickened. Take off stove. Add vanilla, food coloring and powdered sugar until right for icing the cookies. Let set on racks over night and then can use on gift plates or etc....Left over icing can be kept for at least 2 weeks in fridge....
