Sweet-Sour Ribs
3 to 4 lbs. ribs
salt & pepper to taste
1 cup chicken broth (or bouillion in water)
1/4 cup brown sugar
1/4 cup vinegar
1 tbs. soy sauce
1 small onion, thinly sliced
1 (11-0z.) can of mandarin oranges
1 med. green or red pepper, sliced thick
2 tbs. cornstarch
Cut ribs into serving size pieces. Sprinkle with salt and pepper.
Place on shallow baking pan. Roast in 400 F. oven for 15 mins.
turn and brown on other side. Drain off fat and put ribs in crockpot
on low. Combine broth with brown sugar, vinegar, and say sauce.
Pour over ribs in pot. Cover and cook on low 6 to 8 hrs. Turn on
high, add onion. Dissolve cornstarch in a little cold water; stir into
pot. Cover and cook 10 to 15 mins. or till slightly thickened. Stir in
oranges and peppers. Cover and cook 8 mins. Serve over rice or
noodles. Makes 4 to 6 servings.
