    PERSIMMON PUDDING 
    2 c. persimmon pulp
    2 eggs
    1 tsp. soda dissolved in milk
    2 c. flour
    1 tsp. vanilla
    1 1/2 c. sugar
    2 c. sour milk
    2 tsp. cinnamon
    1 tsp. baking powder
    1 stick of melted butter
    Mix in order given and bake about 40 minutes at 350 degrees. Take out of oven after 40 minutes and spread with this sauce.
    SAUCE:
    1 c. brown sugar
    2 tsp. butter
    2 tsp. flour
    1 1/2 c. water
    Combine all ingredients and bring to a boil. Pour over pudding. Return to oven and bake for 10 minutes.

    PERSIMMON PUDDING 
    3 pts. persimmon pulp
    2 c. sugar
    1/2 c. butter
    4 eggs
    1 c. sour milk with 1 tsp. soda dissolved in it
    2 1/2 c. flour
    Mix together the above ingredients. Bake at 350 degrees for 35 minutes.
    TOPPING:
    2 c. sugar
    1 c. water
    1 tbsp. butter
    Mix together, boil until thick syrup. Pour over cooked pudding. Return to oven, let syrup cook in

    2 c. persimmon pulp
    2 c. sugar
    2 eggs, beaten
    1 1/2 c. flour
    1 stick butter (1/2 to 1)
    1 1/2 c. buttermilk
    1 tsp. soda
    1 tsp. cinnamon
    1 tsp. vanilla
    1 tsp. baking powder
    1/8 tsp. salt
    1/4 c. cream
    Mix sugar and pulp together. Mix soda in buttermilk then add all together. Bake at 350 degrees about 30 to 45 minutes.
    SAUCE FOR TOPPING:
    2 tbsp. flour
    1 c. brown sugar
    1/2 c. water
    1/2 stick butter
    Dash of cinnamon
    Let come to a boil. Stir until cool. Pour over pudding. Use all this even if you bake a small pudding.
    Serves 12. I usually make 1/2 of this recipe.
