Tricks to cooking a good steak

1. Good meat, unless you are going to marinate it first, in which case you can get by with a lesser grade and some unseasoned tenderizer and/or one of those hand held tenderizers with the sharp prongs.
2. Score one side of the steak in a diamond pattern about halfway through the steak (when serving it place that side down). I learned this super trick from a great steakhouse where the wait to be seated was almost always an hour, and they didn't take reservations!
3. DON'T OVERCOOK IT!
4. This is the important part - remove the steak from the grill or stove 3-4 minutes before it is done, place it on a plate and immediately cover it with a bowl or pan and let it set for 5-6 minutes. This finishes the cooking and allows the juices to be reabsorbed by the steak.
One final note, if possible have the steak at least 1-inch thickor more. This allows you to cook the outside and still have a medium (or less) cooked center.
I also rub the outside of the steak with either canola or olive oil and fresh ground pepper; salt it just before serving.
