    PUNPKIN DATE MUFFINS
    hese muffins are moist and yummy and even better the second day.
    3/4 cup packed brown sugar
    1/2 cup butter, softened
    1/4 cup light molasses
    1 egg, slightly beaten
    1 cup canned pumpkin
    1 3/4 cup flour
    1 teaspoon baking soda
    1/2 teaspoon cinnamon
    1/4 teaspoon salt
    1/4 teaspoon nutmeg
    1/2 cup chopped dates
    Preheat oven to 350 degrees. Cream, sugar, butter and molasses. Add egg and pumpkin; beat until smooth. Stir together remaining ingredients in separate bowl. Add to pumpkin mixture, stirring just until moistened. Batter will lumpy. Spoon into lightly greased muffin cups 1/2 full. Bake for 20 minutes.
    Yield: 15 muffins
