Mexican Goulash
2 lbs lean ground beef
1 1/3 cup chopped onion
1 cup chopped green pepper
6 cups spicy hot V8 juice...I didn't have spicy hot so used regular V8 and added 1 tsp dried red peppers and 1 tsp chili powder
2 cups uncooked pasta...I used Vegetable Rotini but recipe called for elbow macaroni
4 tsp Worcestershire sauce
1 tsp ground black pepper
Sour Cream (optional)
In a large pot, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until macaroni is tender.
Serve with a dollop of sour cream on top of each serving. 8-10 servings
Serve with a tossed salad and garlic bread and you have a pretty tasty meal. We enjoyed cottage cheese along with it too.
