    Day-After Thanksgiving Noodles

    1/3 cup butter
    1 cup celery, thinly sliced
    1/2 cup chopped onion
    8 cups chicken broth
    1 16-oz. package frozen egg noodles
    1/2 tsp. salt
    1/4 tsp. black pepper
    2 cups cooked turkey, cubed
    1/4 cups fresh parsley
    1 tsp. sage

    Cook’s Note: For a thicker consistency, stir together 1 tablespoon
    flour and 1/4 cup cold water until smooth. Stir into turkey and noodles
    and bring to a boil. Cook about two additional minutes until smooth and
    thickened, stirring occasionally.

    1. Heat butter in Dutch oven over medium heat until melted. Add celery
    and onion and cook until tender, about 3 to 5 minutes, stirring
    occasionally.

    2. Add broth and bring to a boil. Stir in noodles, salt and pepper and
    simmer, uncovered, about 35 minutes or until noodles are tender,
    stirring occasionally.

    3. Stir in turkey and parsley and heat through.

    Serves 4
