    Jo's Mincemeat Pie
(tsp = teaspoon; Tbsp = tablespoon)

    Pie
1 regular pie crust (homemade or bought)
    1 jar "None Such" mincemeat
1 large apple, peeled and chopped
I packet orange zest granules (or 1 Tbsp orange zest)

    Crumb Topping
    1 stick (1/2 c.) butter
1 cup brown sugar (I used the Splenda brown sugar mix)
3/4 cup regular or quick oatmeal
    1/2 tsp cinnamon
1/4 tsp salt (I use Light Salt)
    1 Tbsp Butter flavor sprinkles

Mix together all the ingredients for the topping, til crumbled to the size of peas. I used a pastry blender to do this.

    Directions:
    For the Pie:

Put the crust in a pie plate. Layer apple with mincemeat ending with mincemeat. If you use real orange zest, mix it in with the mincemeat.
I have the granules on hand, so I just sprinkled a packed (1 Tbsp) over the top.
    Top with the crumb topping.
Cover with a sheet of aluminum foil to prevent over-browning.
Bake at 375°F for about 15 minutes, then lower the temp to 350°. Remove the foil for the last 15 minutes of baking.
I didn't watch a clock, so I'm not sure how long this baked... maybe 45 minutes, or an hour. I go by the "smell" and know when it's done.

I'm thinking that these would make nice little tarts in muffin tins.
