    Gourmet Butter Toffee Popcorn

    1 cup butter
    2 cups dark brown sugar
    1/2 cup dark corn syrup
    1/2 teaspoon salt
    1/2 teaspoon baking soda
    1 teaspoon vanilla
    1 cup whole pecans
    1 cup cashews or almonds
    10 cups of homemade popcorn (not microwave)

    Pop the popcorn and pour it into a large metal bowl. (I salt it to taste. The sweet/salt thing is great!)

    Preheat the oven to 250 degrees.

    Using a heavy-bottomed saucepan, melt the butter. Add the sugar, corn syrup and salt. Mix with a wooden spoon until th sugar has dissolved. Bring the mixture to a boil. Boil for about five minutes without stirring. Remove the mixture from the heat, add the baking soda and vanilla extract and stir to mix.

    Pour the syrup over the popcorn and mix gently. Add the nuts and stir until incorporated.

    Spread the toffee popcorn into sheet cake pans and pop them into the oven for about 45 minutes, stirring halfway through.

    Take them out of the oven, let cool on the pans, breaking up the popcorn as it cools.

    Store in airtight containers.
