Dave's Delicious Chili

Ingredients:
1 lb meat, cubed (I usually use round steak, but you can experiment with this)
1 large yellow onion, chopped
3 cloves garlic, chopped
1 can (14 oz) whole tomatoes
1 bell pepper (your choice of color)
1/2 cup tomato paste
1 cup water or stock
1 - 2 tablespoons chili powder, depending on taste
1/2 teaspoon cumin
1/2 tsp oregano
1/4 tsp red pepper flakes
salt & pepper to taste
In a Dutch oven over medium-high heat, brown the meat in olive olive, and then remove. (Take your time and get a good coloring on the meat.)
Saute onion in same pot until soft (5 or 6 minutes). Add garlic and bell pepper. Cook for a few minutes until they soften, but don't burn the garlic. Add meat and stir well.
Add tomatoes, liquids, and spices. Bring to a boil.
Reduce heat, cover, and simmer for 1.5 hours.
Garnish with grated cheese and/or onions, if desired, and serve with tortillas or french bread.
