    Spaghetti Sauce (Red Gravy)

    List of Ingredients


    • 2 lg cans whole plum tomatos
    • 1 lg can crushed tomatos
    • 1 sm can tomato paste
    • fresh basil or dry sweet basil (to taste)
    • garlic of course (to taste)
    • salt and pepper (to taste)
    • extra virgin olive oil (EVOO)


    Instructions


    1. Cover bottom of pot with EVOO and heat

    2. Pour whole tomatos in a large bowl and crush with your hands. add the crushed and whole tomatos, garlic, tomato paste and mix thoroughly.

    3. bring to low boil and add paste. Stir well

    4. add basil, salt and pepper and set on low heat.

    5. Put lid on leaving small open space to release the steam

    6. simmer for 3-4 hours

    7. Cook 1-lb pasta in salted water until done(my favorite for this recipe is thin spaghetti)

    8. Drain pasta but do not rinse. (I find if you rinse the pasta or cook it in oil the sauce will not stick)

    Pour sauce over pasta and sprinkle with parmasean and...
