    "Cinnabon" Rolls

    This recipe makes the best cinnamon rolls in my opinion. I tried a different one recently and my kids all told me to make the usual one - this one.

    List of Ingredients

    ROLLS
    1/2 cup warm water
    2 pckgs. active dry yeast
    2 tablespoons sugar
    1 3 1/2 ounce vanilla pudding mix
    2 cups milk
    1/2 cup butter-- melted
    2 eggs
    1 teaspoon salt
    8 cups flour
    Filling:
    1 cup soft butter
    2 cups brown sugar
    4 teaspoons cinnamon
    CREAM CHEESE FROSTING
    8 ounces cream cheese
    1/2 cup butter
    1 teaspoon vanilla
    3 cups confectioner's sugar
    1 tablespoon milk


    Recipe

    In a small bowl combine water, yeast and sugar. Stir until dissolved. Set aside. In large bowl, take pudding mix and stir into milk. Add butter, eggs and salt. Mix well. Then add yeast mixture. Blend. Gradually add flour; knead until smooth. Place in a large greased bowl. Cover and let rise until doubled. Punch down dough and let rise again. Roll out on floured board to 34 x 21-inch size. Take 1 cup soft butter and spread over surface. In small bowl, mix 2 cups brown sugar and 4 teaspoons cinnamon. Sprinkle over top. Roll up very tightly. With knife, put a notch every 2 inches. Cut with thread or knife. Place in parchment paper lined 9x13 pans 2-inches apart. Cover and let rise until double again. Bake at 350 degrees for 15-20 minutes. Take out when they start to turn golden. DON'T OVER BAKE. Frost warm rolls with Cream Cheese Frosting. Makes about 24 very large rolls.

    CREAM CHEESE FROSTING: Combine all ingredients and mix until smooth.
    Note: Halve this recipe if you have a 1 1/2 lb. bread machine...much easier. Use instant yeast to make it easier. I use my stand mixer if I make this full batch.
