    This is a delicious whole grain bread that I make in the bread machine - it's for a 2 lb. machine. Decrease the ingredients a little for a 1 1/2 lb. machine. I prefer using white wheat for its lighter flavor.

    List of Ingredients




    1 1/2 cups buttermilk
    3 tablespoons melted butter
    2 eggs
    2 teaspoons salt
    1/3 cup honey or sorghum
    2/3 cup oatmeal
    3 teaspoons dough enhancer
    3 tablespoons vital gluten
    4 cups freshly ground whole wheat flour -- 3 cups berries
    1/2 teaspoon baking soda
    1 tablespoon SAF yeast

    Put all ingredients into bread maker pan and set on dough cycle. After the first rise, take it out and shape into loaf. Place in well greased** 9x5 loaf pan and let rise for 20-30 min. (Barely reaching the top of loaf pan.) Bake at 350 for 18 minutes uncovered and 12 min. covered with piece of foil. Take out & soften crust by spreading butter on top of loaf. Let cool, slice and eat.

    **I use a home made mixture of liquid lecithin and oil to grease my casserole pans or bread pans. It's like a liquid "Pam." You can find liquid lecithin in the health food store. Use a plastic bottle (like a honey bottle) and one part lecithin to two parts oil. Just make about a half cup mixture at a time. Shake well together and keep in a cool place. When it comes time to clean your bottle use dish washer soap - a little in the bottle, shake it and let it soak a little. The lecithin is difficult to clean.
