My Cornbread Dressing

Recipe Introduction
Grandma's dressing was the best. I have made some changes, and tried to get it all written down. Thank heavens I watched Grandma make this enough that I knew the ingredients she used, just no measurements.
List of Ingredients
About 6 day old buttermilk biscuits, enough to make 4 cups crumbled
2 packages Jiffy cornbread mix, baked to directions, let dry for 3 days before making dressing
1 cup diced onion
1 cup diced celery
1 stick butter
1/2 teaspoon each, salt and pepper
1 Tablespoon each, sage, thyme and poultry seasoning
3 eggs, beaten
2 cans chicken broth
Recipe
Saute onions and celery in butter. Combine 4 cups crumbled corn bread and 4 cups crumbled biscuits in large bowl. Add all seasonings and sauteed vegetables. Beat eggs with chicken broth, pour over all and stir til well combined. Place in greased crockpot and cook on low 6 hours.
