    BLT Salad with Basil Mayo Dressing

    It was hot, I didn't feel like cooking, and ran across this at All Recipes. I don't know who posted it, but thank you. It is a wonderful way to use up all those good garden tomatoes in the summer also.

    List of Ingredients




    1/2 pound bacon
    1/2 cup mayonnaise
    2 Tablespoons red wine vinegar
    1/4 cup finely chopped fresh basil
    4 slices french bread, cut into 1/4" pieces
    1 teaspoon salt
    1 teaspoon pepper
    1 pound romaine lettuce, torn into bite size pieces
    1 pint cherry tomatoes, quartered

    Recipe



    Brown, drain and crumble bacon reserving 2 Tablespoons of drippings. Whisk together reserved bacon drippings, mayo, vinegar and basil. Let stand at room temperature. In large skillet over medium heat, toss bread cubes with salt and pepper. Drizzle with oil, continue tossing and cooking until light golden brown. In large salad bowl, mix romaine, tomatoes, bacon and croutons. Pour dressing over all and toss to coat.
