Cheeseburger Soup

List of Ingredients
1/2 pound ground beef
1 Tablespoon butter
3/4 cup chopped onion
3/4 cup shredded carrots
3/4 cup diced celery
1 teaspoon dried basil
1 teaspoon dried parsley
3 cups chicken broth
4 cups diced potatoes
3 Tablespoons butter
1/4 cup flour
2 cups cubed Velveeta
1 1/2 cups milk
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup sour cream
Recipe
Brown and drain ground beef, set aside. In large saucepan add 1 Tablespoon butter, then saute onion, carrots, celery, basil and parsley until tender, about 10 minutes. Add beef, chicken broth and potatoes. Bring to boil, cover and simmer 10 to 12 minutes or until potatoes are tender. Meanwhile, in a small skillet melt 3 Tablespoons butter, add 1/4 cup flour, cook and stir 3 to 5 minutes. Add to soup, bring to boil. Cook and stir 2 minutes. Reduce to low then add Velveeta, milk, salt and pepper. Cook and stir until cheese is melted. Remove from heat and blend in sour cream.
