    Here is the recipe for Carnegie Deli's Cheesecake as published in "Manhattan's Dessert Scene" New York City's Top Dessert Spots Reveal Their Secret Recipes by Rose Reisman Copyright 1989. This happens to be one of my favorite books.

    Carnegie's Famous Cheesecake

    Preheat oven to 400 Degrees F.
    Butter a 9-inch springform pan.

    Crust (sugar dough)
    4 oz. sugar
    6 oz. butter - Cream until well combined.

    Add until crumbly and work until mixture then comes together:
    1 1/2 cups flour
    1 tablespoon lemon zest
    1 teaspoon vanilla

    Pat into bottom and sides of pan and pre-bake approximately 15-20 minutes until light brown. Cool on rack.

    Cheese Filling

    Cream together until smooth:
    2 lbs. cream cheese (4 (8 oz.) packages)
    1 cup sugar

    Add and mix until well blended:
    2 eggs
    1 tablespoon lemon juice
    1/2 teaspoon vanilla
    2 tablespoons cornstarch

    Fold into above mixture:
    1 cup sour cream

    Pour into prebaked crust in pan.

    Bake for approximately 45-50 minutes or just until center is a little loose (if cake begins to brown, cover with foil).

    Leave in oven with door open and temperature off until cool.

    Chill. Top with icing sugar or fresh berries.
