    Gina's Chicken Casserole and fresh beans

    List of Ingredients





    Chicken Fricassee
    serves 4

    2 lbs. skinless and boneless chicken breasts
    3 garlic cloves, pressed
    1/2 t. salt
    1/2 t. pepper
    1 t. Italian seasonings
    1 t. paprika
    1 t. Montreal Style Steak Seasonings

    Sauce:
    1 t. olive oil
    1 large onion, chopped
    1 green bell pepper, seeded and cut into strips
    3 garlic cloves, crushed
    1 t. paprika
    1/4 t. cayenne pepper
    1 28 oz. can crushed tomatoes
    2 heaping T. tomato paste
    1 T. Italian seasonings
    1/2 t. brown sugar

    Marinate the chicken overnight with the seasonings. Next day, heat oil in pot and add onions and pepper cooking them till they are limp and then adding the garlic. Stir in the paprika, Italian seasonings, brown sugar and cayenne. Mix well, add the tomatoes and paste. Simmer sauce til it gets a bit thicker, maybe about 15 minutes. Taste the sauce and if need be add a bit more sugar so it isn't too acidic tasting.

    Brown the chicken pieces in some olive oil and then add to the sauce. Cook for another 25 minutes. Serve with noodles.

    Italian Green Beans

    2 cans The Allens Sunshine Brand Cut Italian Green Beans
    1 slice onion, chopped
    1 slice red bell pepper, chopped
    1/2 garlic clove minced
    salt and pepper to taste

    Put all ingredients in a saucepot and heat over med. until done, about 25 mts.
