Nan's Meatloaf
When I think of a winter comfort meal I think of yummy meatloaf and mashed potatoes. This is a great meatloaf. I would also serve frozen green peas, fresh bread and of course a glass of wine..
This recipe is from my cyber friend near Charleston, S.C.
She helped to publish a very successful cookbook for her church. All of her recipes are excellent.
List of Ingredients
- 2 pound of ground round
- 2 eggs
- 1 c. bread crumbs
- 1 bell pepper, finely chopped (optional)
- 1 pkg of dry onion soup
- 1/4 cup ketchup
- 4 strips bacon
- 1 can of tomato soup
Instructions
- Combine ground round and next 5 ingredients and mix well.
- Form into a loaf pan and place in a 10 inch iron skillet; cover meatloaf with tomato soup and top with bacon strips.
- Bake at 350 degrees for 1 hour.
- Yield: 6 to 8 servings
- You can also bake free form or make 4 individual loaves. Bake individual loaves 30 minutes.
