    Risotto--- Iris Monge

    List of Ingredients




    1 small onion, chopped
    1 stick of oleo
    1 1/2 c. arborio rice
    4 c. of chicken broth
    1 tsp salt
    1 c. ketchup
    1/2 c parmesan cheese

    Melt oleo in a heavy saucepan.
    Add chopped onion and saute until limp.
    Pour in rice and stir well.
    Add broth about 1/2 cup at a time, adding more broth as the liquid is absorbed.
    Stir in salt.
    Add ketchup and stir well.
    Serve with parmesan cheese.

    Rice should be aldente' Not soft!

    You can omit the ketchup and add chopped mushrooms when browning the onion.
