BUTTERMILK PANCAKES

- 2 1/2 cups flour
- 4 T. sugar
- 4 tsp. baking powder
- 1 tsp salt
- 6 T. oil
- 1 cup milk
- 1 1/3 cups buttermilk
- 2 eggs
Instructions
- In a large bowl, mix together flour, sugar, baking powder and salt. In a separate bowl, beat together the oil, milk and eggs. Add the wet ingredients to the dry and mix well. Ladle the batter onto a hot, lightly-oiled griddle and cook until pancakes are golden on both sides
