    List of Ingredients


    • 3 cups sifted flour
    • 2 tsp. baking powder
    • 2 lbs. pecans
    • 2 lbs. dates
    • 1 lb. pineapple
    • 1 lb. cherries (red and green)
    • 8 eggs
    • 2 cups sugar
    • 1 tsp. salt
    • 3 T. vanilla


    Instructions


    1. Sift flour and baking powder, add nuts and dried fruit. Set aside.
    2. Beat eggs and gradually add sugar. Add salt and vanilla and add this mixture to the fruit. Pour into well greased tube pan. (Mixture will be stiff) Bake 2 1/2 hours at 250.
    3. Makes 8 lbs.
