    APRICOT COFFEE CAKE

    List of Ingredients

    1 package (1/4 ounce) active dry yeast
    1/4 cup warm water (110 to 115 degrees)
    3/4 cup warm milk (110 to 115 degrees)
    1 egg
    1/2 cup butter or margarine, softened
    4 to 4/1/2 cups all-purpose flour
    1/2 cup sugar
    1/2 teaspoon salt

    APRICOT FILLING
    12 ounces dried apricots
    3/4 cup water
    3/4 cup sugar
    1/4 teaspoon cinnamon

    GLAZE
    1/2 cup confectioners sugar
    1 to 2 teaspoons milk or use lemon juice
    1/2 teaspoon butter or margarine, softened
    1/2 teaspoon vanilla extract

    Recipe


    In a large mixing bowl, dissolve yeast in warm water. Add warm milk, egg, and butter. Mix. Add 2 1/2 cups flour, sugar and the salt; beat until smooth. Add enough remaining flour to form a soft dough. Turn onto a floured board, (or mix a heavy duty mixer. Knead until smooth and elastc, about 6 to 8 minutes. Place in a greased bowl, turning once to coat top. Cover and let rise in a warm place until doubled, about 1 hour.

    For filling: Combine apricots and water in a sauce pan, cover and simmer for 30 minutes. Cool 10 minutes. In a blender or food processor puree until smooth. Stir in sugar and cinnamon. Set aside

    When dough has doubled in bulk, punch down. Divide in half and roll each half into a 15 x 12 inch rectangle. Place each on a greased baking sheet. Spread half the filling in a 15 by 4 inch strip down the center of the dough. With a sharp knife or kitchen shears cut the dough on each side of apricot filling into 1 inch strips. Fold the strips alternately across filling to give it a braided effect. Repeat on the on the other rectangle. Cover and let rise until doubled, about 30 minutes. Bake in 375 (350 might be better) degree oven for 20 minutes or until golden brown. Cool on wire racks for 15 minutes.

    Combine glaze ingredients; drizzle over warm coffee cakes. Serve warm or allow to cool completely.

    Yield: 2 coffee cakes.

    This recipe also freezes well.

    Note: I have never done so, but I think you could mix the dough in a bread machine using the dough setting. Ok I have now used my bread machine putting wet then dry then yeast last and using the dough settings.
