    COTTAGE CHEESE BREAD

    List of Ingredients

    1/2 cup water
    1 cup cottage cheese
    2 Tablespoons butter or margarine
    1 egg
    1 Tablespoon white sugar
    1/4 teaspoon baking soda
    1/2 teaspoon salt
    3 cups bread flour
    2 1/2 teaspoon active dry yeast

    Recipe

    Add the ingredients to your bread machine in order given, and start. You can use up to 1/2 cup more bread flour if the dough seems too sticky. It raises VERY high in the bread machine so you might want to just use the dough cycle and then shape into a loaf or several small loaves. Bake 350 degrees for 30 to 40 minutes.

    I have found that it is easier to mix in my Kitchen Aid.

    If you want you can alter this recipe replacing some of the white flour with whole wheat.

    It makes great cinnamon buns too, but add a little more sugar to the dough. Roll out the dough in a 12 x 18 inch square, coat with softened butter. Sprinkle sugar, cinnamon, raisins, and chopped nuts. Roll up the long way and cut with dental floss into 12 or more rolls. Place in greased pans and bake 20 to 25 minutes. Cool and ice if you wish.

    Buns: Cut dough in half and cut each half in 12 to 15 pieces. Roll each into a ball and place in a 9 inch greased round pan. Let rise again. Spritz with butter (optional) Bake 15 minutes in a 350 degree oven until brown. May spray with water a couple of times while baking for crispier tops.

    Buns may also be placed on a cookie sheet for whole buns.
