    ONION/BACON OATMEAL BUNS

    This recipe is from book number one, "Taste of the Country". It is really good and is great for company. It makes a lot so would be good for a pot luck.


    List of Ingredients


    • 2 cups boiling water
    • 1 cup quick cooking oats
    • 3 tablespoons vegetable oil
    • 2 packages quick rise yeast
    • 1/3 cup warm water
    • 1/4 cup molasses
    • 2/3 cup brown sugar
    • 1 egg
    • 2 teaspoon salt
    • 6 cups flour, maybe more
    • 3/4 pound bacon, cut in 1/4 in pieces, fried crisp and drained ( I usally crumble it after frying)
    • 2 cups finely diced onion, sauted until slightly brown in a little of the bacon drippings.


    Instructions


    1. Pour boiling water over oats. Cool. Add oil, the yeast already softened in the 1/3 cup warm water, molasses, sugar, egg and salt. Beat in 1/2 of the flour. Add bacon and onion. Add remaining flour and knead until smooth. Cover with foil and let rise until double in bulk.
    2. Punch down. Let rise again. Pull off lemon sized piedes and form into round bun shape. Place on greased baking sheets. Let rise until double.
    3. Bake 375 degrees for 18 to 20 minutes. Brush with melted butter while still hot. Makes 30 buns


    Final Comments


    I sometimes only make half the recipe if I don't want so many buns.
