    BREAKFAST BURRITOS


    List of Ingredients


    • 1 bag (16 ounces) frozen southern style hash brown potatos
    • 10 to 12 eggs
    • 1 large onion, chopped
    • 1 green pepper, chopped
    • 1/2 pound bulk sausage, browned and drained, OR 12 slices bacon, cooked crisp and crumbled, OR several slices ham ground or chopped fine
    • 12 flour tortillas (10 inches)
    • 3 cups (12 ounces) shredded chedder cheese
    • salsa (optional)


    Instructions


    1. In a large skillet, fry the hash browns according to package. Remove from pan and set aside
    2. In a large bowl beat eggs, add onions, and green pepper. Pour into same skillet. Cook and stir until eggs are set. Remove from heat. Add the hash browns and cooked sausage (or crumbled bacon or ham) and mix gently.
    3. Place about 3/4 cup of the filling on each tortilla and top with 1/4 cup of the cheese. Roll up by folding the sides as close together as you can and then beginning at the bottom roll up the tortilla. Place on greased baking sheet or large pan.
    4. Bake 350 degrees for 15 to 20 minutes until heated thru. Serve with salsa if desired.


    Final Comments


    These can be made the night before and just popped into the oven the next morning. But bake a little longer about 30 minutes.
