    ED'S BLACK POT STEW

    When we go camping we usually go with several couples. On of these couples always makes Black Pot stew which we all look forward to. It is an all day affair and is cooked in the fire pit under coals.


    List of Ingredients


    • 1 1/2 pounds of stew meat or pot roast cut in large chunks
    • several carrots chunked
    • several potatoes, cut in quarters
    • 2 or 3 green peppers, chunked
    • 2 large onions, quarted
    • 2 cans beef broth
    • 1 cup dry red wine
    • 1/2 teaspoon oregano
    • 1/2 teaspoon thyme
    • 1/2 teaspoon basil
    • 1 1/2 teapoon garlic salt
    • 2 Tablespoons Kitchen Bouquet
    • 1 cup cooking oil


    Instructions


    1. You need a big fire for one day so that the ground is hot. When ready to cook the stew let the fire die down until just red hot coals.
    2. Roll meat in the flour, salt and pepper. Brown in the oil in a heavy black pot kettle so that the meat is evenly browned. Add the other ingredients to cover everything. Stir well.
    3. Dig a hole 1 1/2 to 2 feet deep under the fire. Place 2 shovels of coals in fire. Place COVERED pot in fire. Place 2 inches of dirt on top. Move fire back over hole and bake 6 to 8 hours. Ed checks for doneness several times. He has a metal hook on the end of about a 4 foot long stick which he carefully lifts the pot out of the hole by the curved handle (the type that is on a can of paint). He sets it gently on the ground and carefully lifts the lid so that none of the dirt falls in the stew, ( altho a little dirt makes it tastier). We keep a SMALL fire going while the stew is cooking. Not to big tho.
    4. This can also be made in an oven at 400 degrees. Bake for abour 4 hours.
    5. Serve with hot French bread or rolls.
