    PINEAPPLE UPSIDE DOWN CAKE

    My husband loves to make this one. And he got the Recipe from "Let's Cook Dutch" by Robert L Ririe


    List of Ingredients


    • 1 can pineapple slices (6 slices)
    • 1/2 cup pecans
    • 1/2 cup brown sugar
    • 1 stick butter or margarine
    • 2 yellow cake mixes or 3 golden pound pound cake mixes
    • 1 (14 inch) Dutch oven


    Instructions


    1. Line the bottom of the Dutch oven with aluminum foil so that it will be easy to lift out of the pot when turned over on a plate or boad. Place oven on the heat level it, and melt butter in the oven. When melted add the brown sugar than the pineapple slices, then the pecans. This will be the glaze.
    2. In a seperate bowl, you should have the cake all mixed and ready while the butter is melting in the oven. Pour batter over pineapple slices
    3. This dessert doesn't require much heat on the bottom, just enough to brown the glaze--about 8 briquets should be plenty. As with all baking most of the heat should be on top. It should take about 25 minutes. As it has no filling it will serve only 10 to 12 people, so you may have to cook two or more for a group.
    4. Check it every 15 minutes and when golden brown, test it to see if it is done. If it is take off the heat and lift the cake of the oven by the alumunim foil. Put a pan, or board on it and then turn over quickly so that the blaze is on top. Remove foil. good with ice cream or Cool Whip.


    Final Comments


    If there are not too many of us, he will only make half the recipe using only one cake mix. Use a smaller Dutch oven if you do this.
