    My own creation from what I had on hand

    Recipe Introduction


    Last night I had some left over chicken from a crockpot recipe. I made this up with what I had on hand. All sorts of changes could be made with the meats (turkey or ham), vegetables, soups, noodles, spices, or cheeses. It came out quite tasty.

    List of Ingredients




    Mix together in a large bowl:

    Chicken (or ham or turkey), cubed (about 2 cups)
    Celery, sliced (about 1/2 to 3/4 cup)
    Onion, chopped (about 1/2 cup)
    Asparagus (or any vegetable) cooked and cut in 1 inch pieces.
    Mushrooms, one small can (could use fresh)
    Garlic, one clove diced
    Noodles, cooked and drained

    Mix together and add to meat mixture and mix throughly:

    1 can Cream of Asparagus/Chicken soup (or any cream of soup)
    Mayonaise (about 1/2 cup--maybe a little more)
    Milk, a little to thin
    Cheese, shredded, one ot two handfuls (I used Swiss)
    Salt, pepper, garlic salt or what ever spices to taste

    Pour into casserole dish.

    Top with crushed potato chips and more shredded cheese.

    Bake 350 degrees 30 to 45 minutes or until bubbly.

    The crust was crisy and crunchy. I think you could use cornflakes too.
