    1 1/4 cups (5/8 lb) butter or margarine, at room temperature
    1/2 cup granulated sugar
    1 large egg yolk
    2 teaspoons brandy flavoring
    3 cups all purpose flour
    1/4 teaspoon salt
    1 cup finely chopped pecans or walnuts
    Powdered sugar

    In a large bowl of an electric mixer, beat butter and granulated sugar until creamy; beat in egg yolk and brandy flavoring. In another bowl stir together flour and salt; gradually add to butter mixture, blending thoroughly. Stir in pecans until well combined.

    Roll dough into 1 inch balls and place about *1 inch apart on lightly greased baking sheets. Bake in a 350 degree oven until firm to the touch and very light golden (about 25 minutes). Transfer to racks and let cool slightly; while still warm, roll in powdered sugar to coat. Let cool completely. Store airtight. Makes about 4 dozen.

    * Note: roll the balls smaller then 1 inch. I think they are easier to eat that way.
