    CAKE MIX COOKIES

    Source of Recipe

    List of Ingredients

Lisa used the word 'squidge' which I love and that is exactly what you do to shape the cookies. You squidge them.

    --------------------------------------------------------------------------------

I don't usually make these, but I found a box of Betty Crocker's Devil's Food Cake mix that needed to be used up. Cake never gets eaten in this house, but cookies do.

1 14oz package Devil's Food Cake cake mix (I used a sugar free mix
    1 egg
    1 level tsp cinnamon
    1/2 cup oil
    1/2 cup small chocolate chips
1 x 100g bar good quality dark chocolate, chopped into tiny bits (I did not have one so used 1/ cup of toffee bits.)**

Put the cake mix in a large bowl. Add in everything else and mix like crazy until all the liquid is incorporated.
My mix looked a bit too dry so I added 1 tsp of milk at a time until it just held.

Squidge handfuls of the mix together until it holds in ball shapes then place on a baking sheet and bake at 170C/350F for about 10 minutes until they have flattened a bit and smoothed out. They do spread so space them.

    They are really very lovely

** You could use nuts, butterscotch bits, white chocolat bits, or what ever. On the cake mixes you can use any sort of mix. These were wonderful crunchy cookies.
