    MANDARIN CHICKEN

    List of Ingredients


    • 1 chicken, skined and cut in pieces
    • 2 cups water
    • 1 cup ketchup
    • 1/4 cup packed brown sugar
    • 1/4 cup soy sauce
    • 1/4 cup orange juice concentrate
    • 2 teaspoons powdered mustard
    • 2 teaspoon salt
    • 1 teaspoon pepper
    • 1 teaspoon ground ginger
    • 1 teaspoon garlic salt
    • 1/2 cold water
    • 3 tablespoon cornstarch
    • 1 cup (11 ounces) mandarin oranges, drained
    • 1/2 cup whole pitted ripe olives
    • 2 tablespoons chopped green pepper
    • Hot cooked rice.


    Instructions


    1. Place cut up chicken in a large resealable plastic bag or glass dish. In a bowl combine the next 10 ingredients, beginning with the 2 cups water and ending with the 1 teaspoon garlic salt. Pour HALF over the chicken. seal and refrigerate for 8 hours or overnight. Refrigerate remaining marinade.

    2. In the morning drain chicken and discard the first half of the marinade. Place chicken in the crock pot. Add the second half of the marinade. Cover and cook on low 7 to 8 hours.

    3. Combine cornstarch and cold water and mix until smooth. Stir into chicken mixture. Add the drained manderan oranges, olives, and green pepper. Cover and cook on high 30 to 45 minutes until thickened.

    4. Serve over hot rice. Makes 4 to 6 servings.
