Recipe Introduction
The recipe used reduced-fat and sodium chicken broth and chicken soup. I did not, plus I added some extra ingredients. From what others said of the recipe you could add other veggies, such as carrots, and herbs of your choice. I also added the spinach and chicken 1 hour before the end of cook time instead just before serving.
List of Ingredients
3 cups water
1 14 ounce can chicken broth
1 10 3/4 can condensed cream of chicken soup
3/4 cup uncooked wild rice, rinsed and drained
1 onion chopped (not on original recipe)
1/2 cup sliced celery (not on original recipe)
1/2 teaspoon dried thyme, crushed
1/4 teaspoon ground black pepper
1 teaspoon salt (not on original recipe)
3 cups chopped cooked chicken or turkey (about 1 pound)
2 cups shredded fresh spinach
In a 3 1/2 to 4 quart crock pot combine the water, broth, cream of chicken soup, uncooked wild rice, onion, celery, thyme, salt, and pepper.
Cover and cook on low for 7 to 8 hours or on high for 3 1/2 to 4 hours.
To serve add the spinach and chicken (I added them one hour before the end of cook time). Makes 6(1 1/2 cup) servings.
