    This is the recipe I told you about when Becky and I were both looking at the Gooseberry Patch cookbooks and we both thought it sounded good. Well, it was delicious. Really rich and comforting tasting but actually pretty healthy. I will be making this often at home. Kellie aka Imp

    Chicken with Mushrooms


    4 boneless, skinless chicken breasts (I used Chicken Tenders)
    1/4 c flour
    3 tbsp butter
    1 c sliced mushrooms
    1/2 c chicken broth
    1/4 tsp salt
    1/8 tsp pepper
    1/3 c shredded mozzarella
    1/3 c grate Parmesan cheese
    1/4 c green onions, sliced

    Flatten the chicken breasts to 1/2 inch thick.
    combine chicken and flour; coat evenly. Melt butter in a large skillet, then add chicken and brown on each side, about 2 minutes.

    Preheat oven to 375. Grease a 13 x 9 baking dish. Place chicken in baking dish.

    Saute mushrooms in the chicken drippings until tender. Add broth, salt and pepper to skillet; bring to boil and let cook for 5 minutes to reduce liquid.
    Spoon skillet contents over the chicken and bake, uncovered for 15 minutes.

    Sprinkle with both cheeses and onions; bake 5 more minutes.

    4 servings.
